Description
Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this Glendullan, distilled in 2012, from cask 5, at 56.6%, one of 681 bottles. Glendullan is a fresh, grassy Speyside malt of orchard fruit and a malty sweetness. It sits on the banks of the River Fiddich, in the heart of Speyside. It runs long fermentations and a slow distillation for a green, grassy, lightly fruity spirit.
Worked unhurried through the stillhouse, giving a fresh, lightly fruity Speyside spirit. Maturation came in an Oloroso cask, layered over the green Glendullan make. By the integrating teens the raw notes fade and esters build, the fruity spirit growing rounder and creamier. The fresh, fruity spirit deepens with time, the cask drawing out a soft honey. Because the long fermentation keeps the spirit fresh and grassy, the cask shows clearly with time.
At a hearty 56.6% it carries real weight. Pear, apple and a soft spice, with dried fruit, fig and walnut from the cask. The body is light and fresh, the fruit lifted by a soft oak. A medium finish carries a soft honey. This is a clean, fruity Speyside single malt.
