This Glendullan comes from Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, an 11 year old, distilled in 2009, from cask 313253 + 313254, at 46%. Glendullan is a Speyside single malt, bottled by Diageo as the Singleton of Glendullan for the American market. Most of its make has always gone to blends, above all Diageo's Old Parr. A second distillery was built alongside the original in 1972, the two running together until the old plant closed in 1985.
Drawn from a long fermentation, shaping a green, malty Speyside character. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through integration spirit and wood marry, vanillin rounding out as esters lend a riper orchard and tropical fruit. Because the long fermentation keeps the spirit fresh and grassy, the cask shows clearly with time. A light, clean texture from the spirit carries through the maturation.
Reduced to 46%, it is mellow and fragrant. Green apple, pear and a light grass, lifted by a soft oak. Beneath it run green apple, pear and a soft grass. The close is light and clean, fruit over a gentle oak. This is a fresh, grassy Speyside single malt.
