Description
Glendalough Distillery sit in the Wicklow Mountains, and their Wild Botanical gin is built almost entirely from what grows around them. Working in batches of less than 250 litres, they forage fresh botanicals from the unspoilt landscape: alongside juniper, coriander, angelica, orris and liquorice sit elderflower, wild raspberries, blackberry leaves, wild roses, water mint and lemon balm. The result is a gin that tastes of a specific Irish hillside rather than a recipe.
The nose is fresh and herbal, floral hints lifting juniper and citrus. The palate is harmonious and aromatic, coriander and heather alongside mint, wild rose and a touch of citrus, the finish long and lightly spiced with floral and herbal nuances. Pour it with a Mediterranean tonic and a sprig of rosemary or thyme, or build it into a wild garden Negroni.
