A 28 year old Glencadam from the distillery, at 56.8%. Pear, melon and a light honey fill the glass, with dried fruit, fig and walnut from the cask. Water comes from Loch Lee in the Cairngorms. Bottled at 46 percent, without chill filtration or colour. Revived under Angus Dundee ownership in 2003 after a three year closure. This is the gentle, fruity malt of Brechin.

Description
A 28 year old Glencadam, a distillery bottling, from 1989, cask 7455, at 56.8%, 312 bottles in all. Glencadam is a Highland single malt known for a delicate, fruity, creamy style. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII. It was bought by Angus Dundee Distillers in 2003, who also own Tomintoul, ending a three year closure.
It was run slowly off the spirit still, shaping a gentle, fragrant malt with a tropical lift. Maturation came in an Oloroso cask, layered over the delicate Glencadam make. At this evaporative stage ellagitannins lend structure while oxidation builds a richer tropical fruit over beeswax. Because the upward lyne arms keep the spirit light, the cask shows clearly through the years. The clean, fruity spirit deepens with time, the cask drawing out a creamy honey.
At its natural 56.8% it is full and fruity. Pear, apple and a soft cream, with dried fruit, fig and walnut from the cask. The mouthfeel is light and creamy, carrying the fruit. The finish runs delicate, fruity and creamy. This is a fresh, fruity Highland single malt.
