Description
Glencadam from the distillery, a 25 year old, cask Batch 7, at 46%, 944 bottles in all. Glencadam is a Highland single malt known for a delicate, fruity, creamy style. It was bought by Angus Dundee Distillers in 2003, who also own Tomintoul, ending a three year closure. It was founded in 1825 by the merchant George Cooper, soon after the Excise Act made licensed distilling viable. It is the only distillery in Angus, and the last in Brechin since North Port closed in 1983.
The spirit was taken gently through wash and spirit stills, for a fine, fruity spirit with a light body. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. At this evaporative stage ellagitannins lend structure while oxidation builds a richer tropical fruit over beeswax. The clean, fruity spirit deepens with time, the cask drawing out a creamy honey.
At 46% it is smooth and fruity. A delicate, tropical fruit with a soft body, lifted by a soft oak. It is fruity and gently creamy, the delicate spirit shining through. The close is light and clean, fruit over a gentle oak. This is the gentle, fruity malt of the eastern Highlands.
