Long a core malt of the Ballantine’s blend. Water comes from Loch Lee in the Cairngorms. Founded in 1825 by the merchant George Cooper, in the eastern Highlands. Description
Glencadam from the distillery, a 25 year old, cask Batch 6, at 46%, 1238 bottles in all. Glencadam is a Highland single malt, long a blending malt and now bottled as a single malt in its own right. It was bought by Angus Dundee Distillers in 2003, who also own Tomintoul, ending a three year closure. It is the only distillery in Angus, and the last in Brechin since North Port closed in 1983.
The spirit was run slowly off the spirit still, shaping a gentle, fragrant malt with a tropical lift. Ex-Bourbon casks held it, the American oak lending vanilla and a light honey. At this evaporative stage ellagitannins lend structure while oxidation builds a richer tropical fruit over beeswax. Years in oak deepen the spirit to old gold, the body growing rounder and creamier with time. Active wood frames the fruit without ever crowding the light Highland spirit. Because the upward lyne arms keep the spirit light, the cask shows clearly through the years.
At 46% it is smooth and fruity. A delicate, tropical fruit with a soft body, lifted by a soft oak. A light orchard fruit and a soft spice give it shape. The finish runs delicate, fruity and creamy. This is a fresh, fruity Highland single malt.
