Description
This Glencadam comes from A.D. Rattray, the Morrison family bottler with its shop in the old village school at Kirkoswald on the Ayrshire coast, a 23 year old, distilled in 1990, from cask 5989, at 55.1%, one of 269 bottles. Glencadam is a gentle, fruity Highland malt of orchard and tropical fruit. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII.
The spirit was worked unhurried through the stillhouse, giving a light, clean, creamy Highland spirit. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. In the oxidative, evaporative years the spirit concentrates to tropical fruit, honey and a waxy depth. Years in oak deepen the spirit to old gold, the body growing rounder and creamier with time. Because the upward lyne arms keep the spirit light, the cask shows clearly through the years.
At 55.1%, undiluted, it is rich and fruity. A delicate, tropical fruit with a soft body, lifted by a soft oak. A green apple and a gentle citrus lift the middle. Green apple, citrus and a soft oak see it out. This is a fruity, easy going Highland single malt.
