    An official Glencadam, a 21 year old, 2000, at 60%. Fresh and fruity, all green apple and a creamy note, with red berry, plum and a dry spice from the cask. The only distillery in Angus and the last in Brechin. Water comes from Loch Lee in the Cairngorms. Its upward angled lyne arms raise the reflux for a lighter, fruitier spirit. This is the rather delicate Highland malt.

    A 21 year old Glencadam, a distillery bottling, from 2000, cask 1, at 60%, 684 bottles in all. Glencadam is a Highland single malt, long a core flavour of the Ballantine's blend. Its single malts are bottled at 46 percent, without chill filtration or added colour. Its stills carry lyne arms angled upward, raising the reflux for a lighter, fruitier spirit. It was founded in 1825 by the merchant George Cooper, soon after the Excise Act made licensed distilling viable.

    It was distilled from unpeated malt, shaping a gentle, fragrant malt with a tropical lift. It was fully matured in a Port cask, the wood deep in the fruity spirit. Through oxidative maturity the esters concentrate, the orchard fruit turning to mango, pineapple and a waxy honey. Long ageing turns the fresh pear towards tropical fruit, honey and a gentle spice.

    At a natural 60% it is full and creamy. A delicate, tropical fruit with a soft body, with red berry, plum and a dry spice from the cask. It is fruity and gently creamy, the delicate spirit shining through. The finish is rounded, fruity and clean. This is a fruity, easy going Highland single malt.
