    A 13 year old Glencadam from Double-V, 2012, at 64.1%. A delicate, fruity malt of apple, citrus and a soft spice. Revived under Angus Dundee ownership in 2003 after a three year closure. The only distillery in Angus and the last in Brechin. Its upward angled lyne arms raise the reflux for a lighter, fruitier spirit. This is a Highland single malt of real delicacy.

    A Glencadam of a 13 year old chosen by Double-V, distilled in 2012, from cask 800301, at 64.1%, one of 120 bottles. Glencadam is a Highland single malt, revived under Angus Dundee ownership in 2003. The distillery markets itself on a deliberately delicate house style, all orchard and tropical fruit. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII.

    Distilled in onion shaped copper pot stills, building a soft malt of orchard fruit and a creamy sweetness. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through integration spirit and wood marry, vanillin rounding out as esters lend a riper orchard and tropical fruit. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The clean, fruity spirit deepens with time, the cask drawing out a creamy honey.

    Bottled at a cask strength 64.1%, it is concentrated. A delicate, tropical fruit with a soft body, lifted by a soft oak. The body is light and creamy, the fruit lifted by a soft oak. The finish is rounded, fruity and clean. This is a Highland single malt of real finesse.
