Chosen by Gordon and MacPhail, the Elgin grocer laying down casks on South Street since 1895, this a 13 year old Glencadam, distilled in 1974, at 61.1%, one of 435 bottles. Glencadam is a Highland single malt, founded in 1825 in Angus, in the eastern Highlands. Most of its make long went to blends; bottled single malt Glencadam was rare until a full range arrived.
It was worked unhurried through the stillhouse, building a soft malt of orchard fruit and a creamy sweetness. Maturation came in ex-Bourbon wood, the oak gentle behind the fruity spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend a riper orchard and tropical fruit. Because the upward lyne arms keep the spirit light, the cask shows clearly through the years. Active wood frames the fruit without ever crowding the light Highland spirit. Maturation runs slow and even in the cool, racked Highland warehouses.
At a natural 61.1% it is full and creamy. Melon, pear and a soft, creamy sweetness, lifted by a soft oak. A light orchard fruit and a soft spice give it shape. The finish runs delicate, fruity and creamy. This is Glencadam's creamy, fruity Highland character.
