Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this Glenburgie, distilled in 1995, from cask 4, at 53.5%, one of 627 bottles. Glenburgie is a Speyside single malt, owned by Chivas Brothers and one of the larger Speyside distilleries. It has been a core malt of the Ballantine's blend since Hiram Walker bought it in 1936. It was rebuilt in 1881 by Charles Chree Doig, the architect behind so many Speyside stillhouses.
The spirit was distilled from unpeated malt, for a light body with a gentle, waxy edge. It was finished in an Oloroso cask, the wood building on the light, fruity spirit. Ethereal and fragile, the decades draw it to a honeyed, waxy delicacy of tropical fruit and old oak. Long ageing turns the fresh apple towards beeswax, tropical fruit and a gentle spice. The spirit deepens with time, the cask drawing out a soft beeswax.
At its natural 53.5% it is full and fruity. Apple, pear and a soft honey, with dried fruit, fig and walnut from the cask. A green apple and a gentle citrus lift the middle. A fresh finish closes on apple and a soft oak. This is a fresh, fruity Speyside single malt.
