Description
Chosen by Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, this a 21 year old Glenburgie, distilled in 1995, from cask 6510, at 46%, one of 311 bottles. Glenburgie is a Speyside single malt, long the fruity heart of the Ballantine's blend. It was expanded to six stills after the rebuild, one of the bigger distilleries in the group.
Drawn from a long fermentation, for a light body with a gentle, waxy edge. It was matured in refill ex-Bourbon oak, a soft vanilla beneath the fruit. Into oxidative maturity, slow air builds ripe esters of apple and a light tropical note over a waxy depth. Long ageing turns the fresh apple towards beeswax, tropical fruit and a gentle spice. A soft waxiness from the spirit carries a thread through the maturation. Active wood frames the fruit without ever crowding the Speyside spirit. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At 46% it is bright, waxy and soft. A delicate, soft malt with a waxy edge, over a gentle, creamy oak. It is soft and gently waxy, the light spirit shining through. A long, fruity finish carries a waxy honey. This is a fresh, fruity Speyside single malt.
