Chosen by Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, this a 14 year old Glenburgie, distilled in 2007, from cask 900081, at 62.5%, one of 586 bottles. Glenburgie is a clean, fruity Speyside malt, light and fresh in the glass. It sits near Alves in Moray, east of Forres, in the heart of Speyside. Most of its make goes quietly to blends; single malt Glenburgie is rare, and largely from independents.
Worked unhurried through the stillhouse, for a soft, fruity spirit with a waxy thread. An Oloroso cask held it, drawing the light spirit on over the years. In integration coconut and vanilla knit with the malt, the apple softening towards a waxy honey. Active wood frames the fruit without ever crowding the Speyside spirit. A soft waxiness from the spirit carries a thread through the maturation. First fill wood drives the maturation, the cask clear in the spirit.
At its natural 62.5% it is full and fruity. Baked apple, grass and a light honey, with dried fruit, fig and walnut from the cask. The mouthfeel is light, a faint waxiness carrying the fruit. The finish runs delicate, fruity and waxy. This is a fresh, fruity Speyside single malt.
