A distillery release of GlenAllachie, a 30 year old, from 1989, cask 6116, at 45.7%, 296 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

Distilled in copper pot stills, giving a full bodied Speyside spirit. An Oloroso cask held it, drawing the rich spirit on over the years. In its ethereal years the malt turns waxy and oxidative, faded esters and a whisper of sotolon over dark fruit. The wood frames the spirit without ever stripping the full Speyside body. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.

At a hearty 45.7% it carries real weight. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. The body is full and rich, the fruit deep and dark. The finish runs long, full and warming. This is a rich, sherried Speyside single malt.
