Description
This official GlenAllachie, a 10 year old, from 2014, cask 9900202, at 61.9%, a festival bottling. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was built for the 1960s blend boom, its make long destined for the blender's vat. It was designed almost entirely gravity fed, an efficient plant for its time. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
The spirit was distilled to a full, generous cut, giving a full bodied Speyside spirit. Maturation came in a Barolo cask, layered over the full GlenAllachie make. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The full spirit deepens with time, the cask drawing out its darker register.
At its natural 61.9% it is rich and chewy. Baked apple, honey and a dark chocolate, with a dry red berry, rose and a tannic grip from the cask. Fig, honey and a dark chocolate fill the middle. The close is rich and dark, fruit over a warm spice. This is a deep, sherried Speyside single malt.
