Description
A distillery release of GlenAllachie, a 7 year old, from 2018, cask 11562, at 60.1%, 360 bottles in all. GlenAllachie is a Speyside single malt, this from its peated Meikle Toir project, smoke over a rich, fruity spirit. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
It was worked unhurried through the stillhouse from peated malt, building a peated malt of dark fruit and sweet smoke. It was fully matured in a Pedro Ximenez cask, the wood deep in the rich spirit. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, smoky and full. The full bodied spirit takes active wood well, carrying its dark sugars through the years. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At its natural 60.1% it is rich and chewy. Peat, raisin and a bittersweet chocolate, with raisin, date and treacle from the cask. Fig, honey and a sweet peat fill the middle. A deep finish ends on sweet peat and a dark chocolate. This is the peated malt of Aberlour.
