Description
A 9 year old GlenAllachie from Whisky.de, distilled in 2008, from cask 584, at 57.8%, one of 294 bottles. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
It was run slowly off the spirit still, for the rich, sherried make GlenAllachie is known for. It was matured in a Marsala cask, the wood working deep into the malt. Young and extractive, the cask sheds vanillin and toasted sugars over the full, fruity spirit. The casks are picked closely, the wood matched to the rich GlenAllachie make. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full spirit deepens with time, the cask drawing out its darker register. The wood frames the spirit without ever stripping the full Speyside body.
At a hearty 57.8% it carries real weight. Fig, walnut and a bittersweet chocolate, with a raisined, herbal sweetness from the cask. A dark chocolate and a soft oak give it weight. A long finish carries raisin, chocolate and a treacle. This is a deep, sherried Speyside single malt.
