A 7 year old GlenAllachie from Jack Wiebers Whisky World, 2014, at 52.8%. Orange, raisin and a treacle edge, with a nutty, raisined sweetness from the cask. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. Its four stills carry downward angled lyne arms for a fuller spirit. This is a rich, sherried Speyside single malt.

Description
This GlenAllachie was bottled by Jack Wiebers Whisky World, a 7 year old, distilled in 2014, at 52.8%, one of 187 bottles. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
It was run slowly off the spirit still, building a deep malt of dried fruit and dark sugar. A Madeira cask held it, drawing the rich spirit on over the years. Young and extractive, the cask sheds vanillin and toasted sugars over the full, fruity spirit. The casks are picked closely, the wood matched to the rich GlenAllachie make. Active first fill wood drives the maturation, the cask deep in the malt.
At 52.8%, undiluted, it is dark and full. A rich orchard sweetness and dark sugar, with a nutty, raisined sweetness from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The close is rich and dark, fruit over a warm spice. This is a Speyside single malt of real standing.
