A 7 year old GlenAllachie from A.D. Rattray, 2012, at 65.9%. A rich, sherried malt of date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. Known for its heavy sherry and wine cask maturation. Its four stills carry downward angled lyne arms for a fuller spirit. This is a rich, sherried Speyside single malt.

This GlenAllachie comes from A.D. Rattray, the Morrison family bottler with its shop in the old village school at Kirkoswald on the Ayrshire coast, a 7 year old, distilled in 2012, from cask 900021, at 65.9%, one of 641 bottles. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
It was run slowly off the spirit still, for a thick, ester rich spirit the casks then deepen. An Oloroso cask held it, drawing the rich spirit on over the years. Young and extractive, the cask sheds vanillin and toasted sugars over the full, fruity spirit. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
At a natural 65.9% it is full and rich. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is a rich Speyside malt of dried fruit and chocolate.
