A 30 year old GlenAllachie from the distillery, at 48.9%. Deep and dark, all baked apple, honey and a chocolate, with raisin, date and treacle from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. Founded in 1967 below Ben Rinnes near Aberlour, in Speyside. This is the sherry led malt of Aberlour.

Description
A distillery release of GlenAllachie, a 30 year old, cask Batch 3, at 48.9%, 2400 bottles in all. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It was designed almost entirely gravity fed, an efficient plant for its time. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards.
It was drawn from a thick, full bodied wash, for a thick, ester rich spirit the casks then deepen. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. At a great, fragile age oxidation rules, sotolon lending maple and dried fig as beeswax and old leather linger. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full spirit deepens with time, the cask drawing out its darker register.
At a hearty 48.9% it carries real weight. A rich, sherried sweetness, with raisin, date and treacle from the cask. Fig, honey and a dark chocolate fill the middle. The finish runs long, full and warming. This is the sherry led malt of Aberlour.
