    This GlenAllachie was bottled by Scott’s Selection, a 19 year old, at 55.6%. A rich orchard sweetness and dark sugar. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. Its four stills carry downward angled lyne arms for a fuller spirit. This is a full bodied Speyside single malt of real richness.

    This GlenAllachie was bottled by Scott's Selection, a 19 year old, distilled in 1993, from cask 5073, at 55.6%, one of 267 bottles. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.

    The spirit was taken gently through wash and spirit stills, giving a full bodied Speyside spirit. It rested in ex-Bourbon oak, oak lactones lending a creamy vanilla. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The full spirit deepens with time, the cask drawing out its darker register. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.

    At 55.6%, undiluted, it is dark and full. Raisin, chocolate and a warm spice, with a warm oak spice. The body is full and rich, the fruit deep and dark. A long finish carries raisin, chocolate and a treacle. This is a rich, sherried Speyside single malt.
