A 14 year old GlenAllachie from Duncan Taylor, distilled in 2008, from cask 3037359, 3037369, at 53.8%, one of 162 bottles. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.

The spirit was distilled in copper pot stills, for the rich, sherried make GlenAllachie is known for. It was matured in an Oloroso cask, the wood working deep into the malt. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The full spirit deepens with time, the cask drawing out its darker register. Active first fill wood drives the maturation, the cask deep in the malt.

At its natural 53.8% it is rich and chewy. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. A long finish carries raisin, chocolate and a treacle. This is a full bodied Speyside single malt of real richness.
