    A 14 year old GlenAllachie from Signatory Vintage, 2007, at 65.6%. Raisin, chocolate and a warm spice run through it, with dried fruit, fig and walnut from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. This is a Speyside single malt of real standing.

    Signatory Vintage bottled this GlenAllachie, a 14 year old, distilled in 2007, from cask 900163, at 65.6%, one of 612 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was designed almost entirely gravity fed, an efficient plant for its time.

    The spirit was run slowly off the spirit still, giving a full bodied Speyside spirit. Maturation came in an Oloroso cask, layered over the full GlenAllachie make. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full spirit deepens with time, the cask drawing out its darker register. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At a natural 65.6% it is full and rich. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is a full bodied Speyside single malt of real richness.
