Description
A 14 year old GlenAllachie from Gordon and MacPhail, distilled in 1999, at 46%. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
The spirit was distilled in copper pot stills, giving a full bodied Speyside spirit. A bourbon barrel held it, the wood adding a soft honey over the fruit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Active first fill wood drives the maturation, the cask deep in the malt. The full spirit deepens with time, the cask drawing out its darker register. The wood frames the spirit without ever stripping the full Speyside body.
Bottled at 46%, it is rounded and full. Baked apple, honey and a dark chocolate, lifted by a sweet oak. Dried fruit and a treacle sit behind the spice. The finish runs long, full and warming. This is a full bodied Speyside single malt of real richness.
