It runs very long fermentations for a thick, fruity, ester rich spirit. Known for its heavy sherry and wine cask maturation. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. This is a rich, sherried Speyside single malt.

Description
This official GlenAllachie, a 13 year old, at 55.7%. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
The spirit was drawn from a thick, full bodied wash, building a deep malt of dried fruit and dark sugar. An Oloroso cask held it, drawing the rich spirit on over the years. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The casks are picked closely, the wood matched to the rich GlenAllachie make. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
Bottled at a cask strength 55.7%, it is deep and concentrated. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. It finishes long, full and fruity. This is the sherry led malt of Aberlour.
