Murray McDavid bottled this GlenAllachie, a 13 year old, distilled in 2009, from cask 150016, at 57.9%, one of 297 bottles. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.

It was worked unhurried through the stillhouse, for a thick, ester rich spirit the casks then deepen. An Oloroso cask held it, drawing the rich spirit on over the years. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full bodied spirit takes active wood well, carrying its dark sugars through the years. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.

At 57.9%, undiluted, it is dark and full. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. The finish runs long, full and warming. This is GlenAllachie's deep, fruity Speyside style.
