Description
Rest and be Thankful Whisky Company bottled this GlenAllachie, a 13 year old, distilled in 2004, from cask 900641, at 59.2%, one of 607 bottles. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks.
The spirit was drawn from a thick, full bodied wash, shaping a rich Speyside body with real weight. It was matured in an Oloroso cask, the wood working deep into the malt. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 59.2% it is rich and chewy. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. The finish is rounded, dark and spiced. This is a rich Speyside malt of dried fruit and chocolate.
