Description
A 12 year old GlenAllachie, a distillery bottling, at 48%. It is one of GlenAllachie's The Wood Collection bottlings. GlenAllachie is a Speyside single malt, long a blending malt and now a sherry led name in its own right. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.
The spirit was run slowly off the spirit still, for the rich, sherried make GlenAllachie is known for. It was fully matured in a Sauternes cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Active first fill wood drives the maturation, the cask deep in the malt. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
At 48%, undiluted, it is dark and full. Fig, walnut and a bittersweet chocolate, with honeyed apricot and a candied citrus from the cask. It is full and fruity, the spirit carrying the cask. The finish is rounded, dark and spiced. This is a full bodied Speyside single malt of real richness.
