A deep, dark malt over a full, rich body, with dried fruit, fig and walnut from the cask. Known for its heavy sherry and wine cask maturation. Description
This GlenAllachie was bottled by Duncan Taylor, a 12 year old, distilled in 2011, from cask 3043629, at 54.2%, one of 90 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.
The spirit was distilled to a full, generous cut, for a full make built to take active wood. It was matured in an Oloroso cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Active first fill wood drives the maturation, the cask deep in the malt. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
At a natural 54.2% it is full and rich. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The close is rich and dark, fruit over a warm spice. This is a deep, sherried Speyside single malt.
