Glenallachie 12 Years Old 2009 Cask #900850 (Signatory)

This GlenAllachie was bottled by Signatory Vintage, a 12 year old, distilled in 2009, from cask 900850, at 65.8%, one of 610 bottles. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was built for the 1960s blend boom, its make long destined for the blender's vat. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.

The spirit was taken gently through wash and spirit stills, shaping a rich Speyside body with real weight. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full bodied spirit takes active wood well, carrying its dark sugars through the years.

At a hearty 65.8% it carries real weight. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. It finishes long, full and fruity. This is the sherry led malt of Aberlour.
