Description
A 12 year old GlenAllachie from Adelphi, distilled in 2007, from cask 900827, at 59.7%, one of 621 bottles. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
The spirit was distilled to a full, generous cut, building a deep malt of dried fruit and dark sugar. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The full bodied spirit takes active wood well, carrying its dark sugars through the years.
At a natural 59.7% it is full and rich. A rich orchard sweetness and dark sugar, with raisin, date and treacle from the cask. Fig, honey and a dark chocolate fill the middle. A deep finish ends on dried fruit and a dark chocolate. This is a rich Speyside malt of dried fruit and chocolate.
