This GlenAllachie was bottled by Signatory Vintage, a 12 year old, at 64.3%. A rich, sherried malt of date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. A rich, deep Speyside single malt of dried fruit and chocolate. It matures in sixteen dunnage warehouses on the Aberlour site. This is a Speyside single malt of real standing.

Description
Chosen by Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, this a 12 year old GlenAllachie, distilled in 2007, from cask 900510, at 64.3%, one of 615 bottles. GlenAllachie is a deep, dark Speyside malt of dried fruit, chocolate and spice. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
Worked unhurried through the stillhouse, for a thick, ester rich spirit the casks then deepen. An Oloroso cask held it, drawing the rich spirit on over the years. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 64.3% it is rich and chewy. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. A deep finish ends on dried fruit and a dark chocolate. This is a dark, fruity Speyside single malt.
