    A 12 year old GlenAllachie from Signatory Vintage, 2007, at 64.2%. Raisin, chocolate and a warm spice run through it, with dried fruit, fig and walnut from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. Its four stills carry downward angled lyne arms for a fuller spirit. This is GlenAllachie’s deep, fruity Speyside style.

    Signatory Vintage bottled this GlenAllachie, a 12 year old, distilled in 2007, from cask 900509, at 64.2%, one of 555 bottles. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.

    The spirit was taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. An Oloroso cask held it, drawing the rich spirit on over the years. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Active first fill wood drives the maturation, the cask deep in the malt.

    At a natural 64.2% it is full and rich. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. The finish runs long, full and warming. This is a full bodied Speyside single malt of real richness.
