Description
A GlenAllachie of an 11 year old chosen by Blackadder, distilled in 2008, from cask 846, at 63%, one of 589 bottles. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards.
The spirit was taken gently through wash and spirit stills, for a full make built to take active wood. It was matured in an Oloroso cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The wood frames the spirit without ever stripping the full Speyside body. Active first fill wood drives the maturation, the cask deep in the malt.
Bottled at a cask strength 63%, it is deep and concentrated. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. The body is full and rich, the fruit deep and dark. It finishes long, full and fruity. This is GlenAllachie's deep, fruity Speyside style.
