A 10 year old GlenAllachie, a distillery bottling, cask Batch 9, at 58.1%. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.

The spirit was run slowly off the spirit still, building a deep malt of dried fruit and dark sugar. An Oloroso cask held it, drawing the rich spirit on over the years. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The casks are picked closely, the wood matched to the rich GlenAllachie make.

At its natural 58.1% it is rich and chewy. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. The mouthfeel is full and coating, the fruit dark and sweet. A long finish carries raisin, chocolate and a treacle. This is a deep, sherried Speyside single malt.
