An official GlenAllachie, a 10 year old, at 57.8%. Deep and dark, all baked apple, honey and a chocolate, with raisin, date and treacle from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. It runs very long fermentations for a thick, fruity, ester rich spirit. This is GlenAllachie’s deep, fruity Speyside style.

Description
GlenAllachie from the distillery, a 10 year old, cask Batch 6, at 57.8%, 39000 bottles in all. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was built for the 1960s blend boom, its make long destined for the blender's vat. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
The spirit was distilled in copper pot stills, building a deep malt of dried fruit and dark sugar. It was fully matured in a Pedro Ximenez cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full spirit deepens with time, the cask drawing out its darker register. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At a hearty 57.8% it carries real weight. A rich, sherried sweetness, with raisin, date and treacle from the cask. A baked apple and a warm cinnamon lift the middle. A long finish carries raisin, chocolate and a treacle. This is a rich Speyside malt of dried fruit and chocolate.
