This official GlenAllachie, a 10 year old, cask Batch 13, at 59.8%. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. It was built for the 1960s blend boom, its make long destined for the blender's vat.
Distilled in copper pot stills, building a deep malt of dried fruit and dark sugar. Maturation came in a Pedro Ximenez cask, layered over the full GlenAllachie make. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At 59.8%, undiluted, it is dark and full. A rich orchard sweetness and dark sugar, with raisin, date and treacle from the cask. Dried fruit and a treacle sit behind the spice. The finish runs long, full and warming. This is a full bodied Speyside single malt of real richness.
