Rich and full, with raisin, fig and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. Built for the blend boom of the 1960s, now a sherry led single malt. This is a rich, sherried Speyside single malt.

Description
A 10 year old GlenAllachie from Duncan Taylor, distilled in 2011, from cask 3033094, at 55.3%, a festival cask. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
Drawn from a thick, full bodied wash, for a full make built to take active wood. It was matured in an Oloroso cask, the wood working deep into the malt. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The casks are picked closely, the wood matched to the rich GlenAllachie make.
Bottled at a cask strength 55.3%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is long, rich and spiced. This is a deep, sherried Speyside single malt.
