This Glen Spey was bottled by That Boutique-y Whisky Company, a 21 year old, at 49.7%. Fresh cut grass, green apple and a nutty malt. It stands below the ruins of Castle Rothes. Water comes from the Doonie Burn, shared with its Rothes neighbours. Its purifier stills make a light, clean, grassy spirit. This is the delicate, grassy malt of Rothes.

This Glen Spey was bottled by That Boutique-y Whisky Company, a 21 year old, at 49.7%, one of 1278 bottles. Glen Spey is a delicate, grassy Speyside single malt, light and clean in the glass. Its water is the Doonie Burn, a source it shares with its Rothes neighbours. It was bottled as a single malt in Diageo's Flora and Fauna range in 2001, one of its rare official outings. Under Gilbey it took the Glen Spey name and supplied the house Spey Royal blend.
The spirit was worked unhurried through the stillhouse, for a fine, clean malt the blenders have long prized. Ex-Bourbon casks held it, the gentle American oak letting the spirit lead. At oxidative maturity aldehydes lend a nutty edge while ellagitannins draw a gentle, drying grip across the malt. Years in oak round the spirit, the fresh notes deepening towards a nutty honey and orchard fruit. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At 49.7%, undiluted, it is deep and waxy. Green apple, hay and a soft cereal, lifted by a soft oak. A light orchard fruit and a soft oak give it shape. A fresh finish closes on a nutty malt and a soft oak. This is a quiet, characterful Speyside single malt.
