Chosen by Signatory Vintage, the Edinburgh house that now bottles at Edradour above Pitlochry, this an 18 year old Glen Spey, distilled in 2007, from cask 4, at 57.4%, one of 662 bottles. Glen Spey is a Speyside single malt made on Doonie Burn water at Rothes. It passed to the London gin house W and A Gilbey in 1887, the first English firm to own a Scottish distillery. It sits below the ruins of Castle Rothes, once the seat of the Earls of Rothes.
It was distilled from unpeated malt, building a light, fragrant spirit with a thread of nuttiness. Maturation came in an Oloroso cask, layered over the fresh Glen Spey make. Through oxidative maturity the esters concentrate, the green grass turning to a nutty honey and soft tropical fruit. Years in oak round the spirit, the fresh notes deepening towards a nutty honey and orchard fruit.
Bottled at a cask strength 57.4%, it is concentrated. Pear, cereal and a green, grassy lift, with dried fruit, fig and walnut from the cask. The mouthfeel is light, a faint waxiness carrying the fruit. It finishes light, fresh and faintly nutty. This is Glen Spey's clean, nutty Speyside character.
