Description
A 12 year old Glen Spey from James Eadie, distilled in 2013, from cask 373070, at 52.5%, one of 445 bottles. Glen Spey is a light, fragrant Speyside malt of fresh grass and a nutty malt. Its stills carry purifiers, which raise the reflux and return the heavier vapours for a lighter, cleaner spirit. The distillery is said to be watched over by the ghost of a soldier who died on the site. Its stills were doubled from two to four in the 1970 expansion, the make still light and grassy.
Taken gently through wash and spirit stills, building a light, fragrant spirit with a thread of nuttiness. Maturation came in an Oloroso cask, layered over the fresh Glen Spey make. In integration coconut and vanilla knit with the malt, the hay softening towards a nutty honey. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Active wood frames the fruit without ever crowding the delicate Speyside spirit.
At 52.5%, undiluted, it is deep and waxy. Green apple, hay and a soft cereal, with dried fruit, fig and walnut from the cask. Pear, hay and a creamy vanilla fill the middle. The finish is light, grassy and clean. This is a light, nutty Speyside single malt.
