    A 12 year old Glen Spey from Signatory Vintage, 2007, at 49.8%. A delicate, grassy malt of apple, pear and a soft spice, with dried fruit, fig and walnut from the cask. Its purifier stills make a light, clean, grassy spirit. Water comes from the Doonie Burn, shared with its Rothes neighbours. This is a Speyside single malt of real lightness.

    Signatory Vintage bottled this Glen Spey, a 12 year old, distilled in 2007, from cask 802147, at 49.8%, one of 549 bottles. Glen Spey is a Speyside single malt whose purifier stills give a light, grassy spirit. When the firm merged with Justerini and Brooks, Glen Spey became a key malt in the J and B blend. It was bottled as a single malt in Diageo's Flora and Fauna range in 2001, one of its rare official outings. It sits below the ruins of Castle Rothes, once the seat of the Earls of Rothes.

    Worked unhurried through the stillhouse, building a light, fragrant spirit with a thread of nuttiness. Finished in an Oloroso cask, the wood building on the light spirit. In integration coconut and vanilla knit with the malt, the hay softening towards a nutty honey. Built for the blender's art, the light make ages with quiet grace as a single malt. Long ageing turns the green, herbal edge towards orchard fruit, honey and a gentle spice.

    At a natural 49.8% it is full and nutty. Green grass, light honey and a nutty malt, with dried fruit, fig and walnut from the cask. A light orchard fruit and a soft oak give it shape. The finish is rounded, nutty and clean. This is the delicate, grassy malt of Rothes.
