This Glen Spey was bottled by Pendulum Spirits, an 11 year old, distilled in 2010, from cask 801095, at 60.7%, one of 549 bottles. Glen Spey is a Speyside single malt whose purifier stills give a light, grassy spirit. James Stuart held the licence to Macallan at the time, and bought that distillery outright in 1886. It was founded in 1878 by the grain merchant James Stuart, who added stills to an old oatmeal mill.

It was drawn off after a ferment of two to three days, giving the clean, nutty Speyside spirit Glen Spey is known for. A refill bourbon hogshead held it, keeping the light, nutty character to the fore. Through integration the spirit and wood marry, vanillin rounding out as esters lend a riper orchard fruit over the nutty malt. The lantern stills set a light, fresh tone that the oak then slowly deepens. Active wood frames the fruit without ever crowding the delicate Speyside spirit.

At 60.7%, undiluted, it is deep and waxy. A delicate, fruity malt with a waxy edge, lifted by a soft oak. A green apple and a gentle spice lift the middle. The finish is light, grassy and clean. This is a light, nutty Speyside single malt.
