    An official Glen Moray, an 11 year old, 2007, at 56.3%. Green apple, vanilla and a soft honey run through it, with dried fruit, fig and walnut from the cask. Glen Moray is a Speyside malt from Elgin, founded in 1897 in a former brewery. A key malt in the Cutty Sark and Label 5 blends. This is a Speyside single malt of real value.

    An official release of Glen Moray, an 11 year old, from 2007, cask 99521, at 56.3%. Glen Moray is a light, easy Speyside single malt with a long line of cask finishes. It closed in 1910 and reopened in 1923 under Macdonald and Muir of Glenmorangie.

    Distilled light and fruity in the Glen Moray style, for a clean make of orchard fruit and a soft honey. An Oloroso cask shaped the finish, over the fruity Glen Moray spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey and toffee. River Lossie water and the tall stills give the light Glen Moray make. Long ageing turns the fresh apple towards dried fruit, honey and a soft spice. It was built on Gallow Hill at Elgin, the old site of the town's hangings. The light, fruity make takes cask flavour well while keeping its apple and pear.

    At 56.3%, undiluted, it is deep and fruity. A light, orchard fruit and toffee, with dried fruit, fig and walnut from the cask. The mouthfeel is light, the fruit carried on a clean body. The close is light and clean, fruit over a gentle oak. This is Glen Moray, a pioneer of cask finishing.
