Description
From the bottler Hidden Spirits, a 30 year old Glen Moray, distilled in 1991, from cask GLM9122, bottled at 50.1%, one of 172 bottles. Glen Moray, founded in 1897 in a former brewery, is one of Speyside's best loved malts. It was built on Gallow Hill at Elgin, the old site of the town's hangings.
The spirit was run through the stills on River Lossie water for a light make, giving a clean, sweet Speyside spirit. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the apple. In its ethereal years the malt is waxy and oxidative, faded esters and a touch of sotolon (maple, dried fig). A gentle maturation suits the light make, the orchard fruit growing richer with time. Maturation in the bonded warehouses at Elgin is slow and steady. River Lossie water and the tall stills give the light Glen Moray make. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit.
At a natural 50.1% it is full and fruity. Apple, pear and a soft vanilla, with a soft vanilla from the oak. Pear, honey and a creamy toffee fill the middle. It finishes light, fresh and fruity. This is Glen Moray, a pioneer of cask finishing.
