    A 13 year old Glen Moray from the bottler Single Cask Collection, 2007, at 58.3%. Green apple, vanilla and a soft honey run through it. A pioneer of wine cask finishing, working with Chardonnay casks in the 1990s. A key malt in the Cutty Sark and Label 5 blends. This is a fresh, fruity Speyside single malt.

    From the bottler Single Cask Collection, a 13 year old Glen Moray, distilled in 2007, from cask 5857, bottled at 58.3%, one of 212 bottles. Glen Moray, founded in 1897 in a former brewery, is one of Speyside's best loved malts. It runs a large still house at Elgin, expanded over the years to meet demand.

    The spirit was distilled from unpeated malt in copper pot stills, for a clean make of orchard fruit and a soft honey. Maturation came in ex-Bourbon wood, the oak quiet behind the light spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey and toffee. Years in oak round the spirit, the green apple deepening to honey and dried fruit. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. Its light, fresh spirit suits a wide range of cask finishes, from sherry to rum.

    At a hearty 58.3% it carries real weight. A light, orchard fruit and toffee, with a soft vanilla from the oak. A baked apple and a gentle spice lift it. Apple, pear and a soft oak see out the finish. This is Glen Moray's clean, accessible Speyside style.
