A Glen Keith of a 23 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 1992, from cask 120583, bottled at 50.8%, one of 202 bottles. Glen Keith is a Speyside single malt known for a light, sweet, fruity character. It ran triple distillation from the start, switching to double distillation by the 1980s.
Distilled from unpeated malt in tall, narrowing stills, for the light, fruity make Glen Keith is known for. Ex-Bourbon casks held it, the gentle American oak letting the light fruit lead. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, tropical fruit. Years in oak round the spirit, the green apple deepening to honey and tropical fruit. Built for the blender's art, the spirit ages with grace as a single malt. The clean, fruity make takes cask flavour well while keeping its apple and pear.
At 50.8%, undiluted, it is deep and fruity. Pear, melon and a light honey, with a soft vanilla from the oak. Pear, citrus and a creamy vanilla fill the middle. It finishes light, fresh and fruity. This is a light Speyside single malt from the town of Keith.
