Description
For the Grecia chapter of Caminho do Sul, the Gin Sul bus took the ferry to the Peloponnese, where Sebastian and Rafael learned the craft of aniseed spirits in a traditional ouzo distillery before pressing on to cocktail-loving Athens. The result fuses the house gin with the botanicals of ouzo: aniseed, fennel, mastic and thyme. The ceramic bottle, painted with a Greek column, flag and sword, leaves little doubt about where it has been.
The nose is aromatic and spicy, juniper meeting aniseed notes and a resinous edge of mastic. The palate is full-bodied and intense, fresh citrus rising over green fennel and star anise, before a long finish that turns peppery and herbal with thyme. Pour into a tall glass with Mediterranean tonic and a strip of lemon peel.
