Ktima Gerovassiliou lies about 25 kilometres from Thessaloniki, in the coastal Epanomi zone where Vangelis Gerovassiliou has revived his family vineyard since 1981. The site sits near the sea on light, sandy soils, and the maritime influence keeps the growing season moderate, which preserves the high natural acidity that defines this style of Sauvignon Blanc. The estate is farmed sustainably. Grapes are picked to hold freshness, and the wine is made to protect the grape's pungent aromatics rather than to build weight, so the fruit character stays bright and precise. The result is pale straw with green tints. The nose is aromatic and lifted, with lemon and green apple joined by elderflower, white flowers and a cut-grass herbal note. The palate is dry and taut, the citrus and orchard fruit framed by a mineral, faintly saline line and a clean, zesty finish. This is a wine built on acidity and aroma rather than oak or body. Serve it cold, at 8 to 10 degrees, in a standard white glass.
