Ktima Gerovassiliou lies in Epanomi, around 25 kilometres south of Thessaloniki in northern Greece, where Vangelis Gerovassiliou has rebuilt the family vineyard and become a leading figure in Greek wine. This rosé is made from Xinomavro, the high-acid, structured red grape of northern Greece, here vinified pale and dry. The vineyards sit on free-draining sandy and limestone soils close to the Thermaic Gulf, where coastal breezes and a long, dry growing season ripen the fruit while preserving the firm natural acidity that defines Xinomavro. The grapes are pressed gently and fermented at cool temperatures in stainless steel, with no oak, so the focus stays on freshness, fruit and the grape's savoury character. It pours a pale pink. The nose shows red berry, redcurrant and citrus peel with a dried-herb, Mediterranean lift. The palate is dry, crisp and saline, the red fruit framed by lemon-fresh acidity and a stony finish that reflects the maritime site. It closes clean and savoury. Serve well chilled at 8 to 10 degrees.
